Vegan Banana Bread

This is more like bread than cake, not too sweet. Adapted from:

Egg substitute
4 tsp gram flour (aka. besan, chick pea flour)
80 ml vegetable oil
80 ml soya milk

Wet ingredients
4 ripe bananas, mashed
80 ml vegetable oil

Dry ingredients
4 oz sugar
11 oz brown flour
1 tsp salt
2 tsp sodium hydrogen carbonate
pinch ground cloves
pinch ground nutmeg
1 tsp ground cinnamon

Preheat oven to 175°C.

Crush the gram flour through a sieve or tea strainer with the back of a spoon. Add a little of the soya milk and mix to a smooth paste. Add the remainder of the soya milk and mix. Add 80 ml oil and mix. Add 100 ml warm water, mix and leave to stand for 5 minutes.

Sieve the dry ingredients into a bowl and mix well.

Mix the wet ingredients in a bowl. Add the egg substitute and mix well. Fold in the dry ingredients. Poor into a warm, oiled tin and bake for 40–45 minutes (until a skewer comes out clean). Leave to cool for 10 minutes in the tin, then tip out onto a wire rack.
